valmg’s Country Ham And Vegetable Lasagna Recipe
By valmg on Jan 17, 2012 with Comments 10
We made a ham recently. We had a ton of leftovers, so I found myself trying to think of dishes and recipes that I could use leftover spiral ham in. I decided to try my hand at a ham lasagna. It was super easy to make and turned out to be quite tasty too!
INGREDIENTS
- 9 no-bake lasagna noodles
- spiral ham or thick ham slices
- 1x 12 oz package steamable mixed vegetables
- 16 oz ricotta cheese
- 4 oz mozzarella cheese
- 2 packets white country gravy mix
- 2-4 oz shredded cheddar cheese (or any shredded cheese, I chose cheddar for the color)
DIRECTIONS
Preheat oven to 350 degrees F.
Prepare the steamable mixed vegetables in the microwave, heating for about 3 minutes.
Spray a 9X13 baking dish with non-stick cooking spray.
Mix the mixed vegetables, ricotta cheese and mozzarella cheese together in a bowl.
Prepare the country gravy mix according to the instructions. Basically you’re boiling water and mixing.
Put a layer of the country gravy in the bottom of the pan.

Place a layer of spiral ham on top of the noodles. For best taste with spiral ham make the layer two slices thick.

Lay down a second layer of noodles

Place the cheese and vegetable mixture on top of the noodles.

Put down another layer of lasagna noodles.
Put a layer of the country gravy on top of the noodles.

Sprinkle cheese on top.

Cover with foil and bake for about 45 minutes (or until noodles are soft)

Let stand about five minutes before serving.

Enjoy!

That is one of the most creative uses of lasagne noodles I have ever seen.
Thanks! Karen, Have you ever seen any gluten-free lasagna noodles?
Yes, I have, and there is a box of them in my pantry right now!
May I ask who makes them? I want to get some so I can make traditional type lasagna for my son. Thanks.
Strangy to consider lazagna without red gravy.
Agreed but it was delicious. It’s good to think out of the box sometimes.
That looks really good!
It tasted even better then it looked!
ohhhh! Anything with Ham and Gravy! Hubby is going to love this one.. I need to get out of my comfort zone and give some thought on using lasagna noodles for something else, beside the traditional lasagna. Thank you for sharing!
I’d never had ham and country gravy before, and this was also the first time I made a lasagna with something other then red sauce. Yummy!
