In our house we don’t use a lot of sugar in our beverages, unless it’s tea. We do use it for baking though. Because we like sweet foods. After Lap-band and losing weight, I am more mindful of many things that I eat. As I , along with the rest of my family, am especially fond of sweet things, I was very curious to try new Domino Light.

Domino Light is super easy to use. Wherever you’d use sugar you can use Domino Light but only need half of the amount. so if a recipe calls for a cup of sugar you only need to use a half cup of Domino Light. I tried the Domino Light in both hot and icea tea. I found that it dissolved and mixed well. It tasted very much like sugar, and better than artificial sweeteners that I’ve tried. To see how the Domino Light did as an ingredient, I made a banana bread using it as a replacement for sugar. I used a Banana Bread recipe that I’m familiar with from Chow.com, since I wanted to use a recipe that I was familiar with so I could compare taste.
- 2 cups all-purpose flour
- 2 teaspoons baking powder
- 5/8 teaspoon fine salt
- 1/2 teaspoon baking soda
- 1/2 teaspoon ground cinnamon
- 1 cup granulated sugar <– I USED 1/2 CUP DOMINO LIGHT HERE.
- 2 large eggs, at room temperature
- 1/3 cup vegetable oil
- 1 teaspoon vanilla extract
- 4 very ripe medium bananas, mashed (about 1 1/4 cups)
- 1/2 cup sour cream
Heat the oven to 350°F.
Grease and dust a loaf pan with flour, or use non-stick baking spray with flour (what I used).
Whisk together the measured flour, baking powder, salt, baking soda, and cinnamon in a large bowl to aerate and break up any lumps. Set aside.
Mix the sugar, eggs, oil, and vanilla on medium speed until thoroughly combined, about 2 minutes.
Add the bananas and sour cream and mix until just combined. Scrape down the sides of the bowl, add the flour mixture, and mix until just combined.
Pour the batter into the prepared loaf pan.
Bake on the middle rack for about 1 hour, or until a toothpick inserted in the center comes out clean, the top is golden brown, and the bread is pulling away from the sides of the pan.
Transfer to a wire rack and cool for 10 minutes.
Slide a knife around the perimeter of the pan, invert to release the bread, and cool completely on the wire rack before serving.
The resulting banana bread was moist and delicious, and tasted just as good as when I’d made it with just sugar. The big difference was it had a lot less calories!
I also made some Chocolate Chip Muffins using Domino Light, which were also good.
