Bread is one of my youngest son’s favorite foods, possibly his very favorite food. Of all forms of bread, the bagel is my son’s absolute favorite hands down. His favorite way to eat them is plain and whole, like you would eat a donut. We were introduced to Udi’s muffins and bagels recently. My son gobbled up those bagels right up, his favorite being the cinnamon raisin. He enjoyed those so much that I looked into the other gluten-free products that Udi’s makes. One of their mainstays is bread, sliced gluten-free bread. That interested me, since my son especially enjoys grilled cheese sandwiches on a chilly day. I made sure to pick up a loaf so that we could check it out.
Udi’s Gluten Free white bread is on the soft side, slightly less grainy as compared to some other gluten-free breads. I didn’t have to do anything different to make a gluten-free grilled cheese with Udi’s then I do with any other regular bread. The resulting sandwich was yummy and cheesy, and pretty darn good. I’ve had some store bought regular breads that were gross, this was actually good! Here’s how you make a yummy gluten-free grilled cheese sandwich.
Take two slices of bread.
Butter one side of each of the pieces of bread. I use Country Crock which is gluten-free.
Put your cheese inside the bread.
Fry the sandwich in a shallow pan, flipping when the bread is golden and the cheese is gooey.

That’s it!
I like to keep things like this on hand for quick meals when we’re in a hurry. I actually prefer to cook meals from scratch, using gluten-free ingredients such as rice and potatoes to make the meal safe for everyone and to keep costs down. I love coming up with new recipe ideas, and trying new recipes.

Must check this product out. Gluten free breads too often are nasty. Wish I had the recipe that the Disney ceruise line used, It was the exception to the rule.
You should hook up with Small Town Mommy. Her daughter has to be on a gluten free diet too – maybe you could swap recipes.

Grilled cheese. Sigh. The ultimate in YUMMINESS! I have a friend with celiac sprue, and I get her Udi’s all the time. They are so terrific. We have another local brand of gluten free goodies here in the Puget Sound called Wheatless in Seattle… they do a good pizza crust!
Looks delicious. Grilled cheese is one of my comfort foods. i don’t know what i’d do if i couldn’t eat it!! i’ve never had any problem with gluten, but i see so many products these days that are gluten free it must be a pretty common problem.
