Are you ready for some football???!!!

The big day approaches rapidly – the Superbowl. It’s a day for entertaining, and definitely a day for serving snacks. Ours are usually crunchy and salty, or hot and melty. Snacks and appetizers are foods that people are so creative with, I always enjoy seeing what people are coming up with. Here are two football party recipes from Kraft that are perfect for game day. The Chuckwagon Chili Mac is similar to something that I make and I may try this one for the big game. The 5-Layer Mexican Dip sounds great and I think my son will gobble it up, that boy loves nachos. Chuckwagon Chili Mac

KRAFT CHUCKWAGON CHILI MAC RECIPE

prep time 5 min
total time 20 min
makes 6 servings, about 1 cup each

INGREDIENTS

  • 1 pkg. (7-1/4 oz.) KRAFT Macaroni & Cheese Dinner
  • 1 lb. extra-lean ground beef
  • 1 Tbsp. chili powder
  • 1 tsp. ground cumin
  • 1 can (14-1/2 oz.) stewed tomatoes, undrained
  • 1 can (15 oz.) kidney beans, rinsed
  • 1/3 cup BREAKSTONE’S Reduced Fat or KNUDSEN Light Sour Cream
  • 1/3 cup KRAFT 2% Milk Shredded Cheddar Cheese

INSTRUCTIONS

PREPARE Dinner as directed on package, using the Light Prep directions.

MEANWHILE, brown meat with chili powder and cumin in large nonstick skillet on medium heat. Add tomatoes and beans; simmer 3 min., stirring occasionally.

STIR in prepared dinner; cook 3 to 5 min. or until heated through, stirring occasionally. Top with sour cream and cheese.

Jazz It Up – Stir in 2 Tbsp. chopped cilantro.

5-Layer Mexican Dip

KRAFT 5-LAYER MEXICAN DIP RECIPE

prep time 10 min
total time 3 hr 10 min
makes 4 cups or 32 servings, 2 Tbsp. each

INGREDIENTS

  • 1 can (15-1/2 oz.) refried black beans
  • 1 Tbsp. chili powder
  • 1/2 tsp. ground cumin
  • 1 cup BREAKSTONE’S or KNUDSEN Sour Cream
  • 1 cup KRAFT Shredded Cheddar Cheese
  • 3 green onions, sliced
  • 1/3 cup sliced black olives
  • 1 tomato, chopped

INSTRUCTIONS

MIX beans, chili powder and cumin; spread onto bottom of 9-inch pie plate.

TOP with layers of remaining ingredients.

REFRIGERATE several hours or until chilled. Serve with tortilla chips.

    I like oven fried pickles!

    1 jar Kosher Dill Pickle spears
    3/4 cup bread crumbs
    1 tsp. oregano
    ½ tsp. paprika
    1/4 tsp. pepper
    1 egg

    Preheat oven to 375. Mix whole wheat bread crumbs, oregano, and paprika in a shallow bowl. In a separate bowl, whisk the egg.

    Rinse pickle spears with water to take off some of the excess sodium. Dip in the egg mixture, than with the bread crumb mixture. Bake until golden brown.

    Serve with low-fat honey mustard dip.

    I love Spinach pinwheels as a different snack:

    2 (10 ounce) packages frozen chopped spinach, thawed drained & squeezed dry in paper towels
    1 (8 ounce) package cream cheese, softened
    1/2 cup mayonnaise
    1/2 cup sour cream
    1 envelope ranch dip mix
    1 jar bacon bit (or to taste)
    4 green onions, chopped
    1 (8 count) package 10-inch flour tortillas

    In medium mixing bowl, combine cream cheese, sour cream and mayonnaise.
    2 Beat in dip mix.
    3 Add green onion, bacon bits and spinach (broken up into small clumps).
    4 Mix thoroughly.
    5 Spread mixture onto tortillas, leaving a 1/2″ space around edge.
    6 Roll up each tortilla tightly, and wrap each in plastic wrap.
    7 Chill for several hours or overnight.
    8 To serve, cut off ends and cut into 1/2″ slices.

    This is one of our faves. It can also be done in a crock pot or microwave. One thing, it’s only good hot.
    Rueben Dip
    1 (8 ounce) packages cream cheese ( very soft but not melted)
    1/2 teaspoon garlic powder (optional)
    cayenne pepper ( optional or adjust to taste)
    2 tablespoons sour cream
    1/2 cup kraft thousand island dressing ( or use another popular brand)
    1 3/4 cups shredded swiss cheese, divided
    4 ounces sliced pastrami or Deli corned beef, chopped
    1/2-3/4 cup sauerkraut, well drained (hand-squeeze out any excess moisture)
    pumpernickel or cocktail size rye bread, toasted

    Directions
    1. Heat oven to 400 degrees F.
    2. Grease a 9 or 10-inch glass pie plate.
    3. In a bowl combine the soft cream cheese with garlic powder, cayenne pepper (if using) sour cream and Thousand Island dressing; mix vigorously until very smooth.
    4. Mix in 1-1/4 cups Swiss cheese and the chopped pastrami or corned beef.
    5. Spread the mixture into the pie plate.
    6. Top with the sauerkraut, then sprinkle remaining 1/2 cup Swiss cheese on top.
    7. At this point you may cover and refrigerate for 24 hours.
    8. Bake (400 degrees F) for about 15-20 minutes or until edges are bubbly and the mixture is very hot in the middle, you may need a slightly longer baking time if the mixture was chilled

    Something we always have are cut into 3rds hot dogs wrapped with pillsbury cresent rolls. Bake as directed on the cresent roll can. My kids love these.

    Love Zesty Hot Broccoli Dip
    1 cup MIRACLE WHIP Light Dressing
    1 pkg. (10 oz.) frozen chopped broccoli, thawed, well drained
    1 jar (2 oz.) diced pimientos, drained
    1/2 cup KRAFT Grated Parmesan Cheese
    1 cup KRAFT 2% Milk Shredded Mozzarella Cheese, divided
    WHEAT THINS Reduced Fat Baked Snack Crackers
    make it

    HEAT oven to 350°F. Combine first 4 ingredients and 1/2 cup mozzarella.

    SPREAD into 1-qt. baking dish or 9-inch pie plate.

    BAKE 20 to 25 min. or until heated through. Sprinkle with remaining mozzarella; bake 5 min. or until melted. Serve with crackers.

    One 24 oz. carton cottage cheese
    1 pkg. dehydrated onion soup mix
    1/4 cup milk
    Puree in the blender till smooth.

    Healthy game day salad:

    peel a cuccumber, and slice lengthwise. then slice into 1/4″ pieces.

    Dice a large tomato.

    Dice a medium sized sweet onion.

    Toss everything with 2 tbs olive oil vinaigrette. Top with crumbled feta cheese. Chill and serve with crackers. This is a really delicious, flavorful salad and it is really healthy too!

    Crab Dip

    Ingredients:

    * 1 pound softened cream cheese
    * 1 cup cocktail sauce
    * 1 pound lump crab
    * Chives, for sprinkling
    * Crackers, for serving

    Directions:

    1.

    Spread 1 pound of softened cream cheese in a 5-by-9-inch baking dish. Layer with 1 cup of cocktail sauce and 1 pound of lump crab meat. Sprinkle chopped chives on top and serve with crackers.

    Yummy Cheese Pizza Dip

    1 envelope Herb Soup Mix — dry
    1 cup sour cream
    1 cup ricotta cheese
    1 cup shredded mozzarella cheese
    1/4 cup pepperoni — chopped
    1 loaf Italian Bread

    Directions:

    Preheat oven to 350F degrees. In shallow 1 quart baking dish, combine soup mix, sour cream, ricotta cheese, 3/4 cup mozzarella cheese and peperoni. Sprinkle with remaining 1/4 cup mozzarella cheese. Bake uncovered 30 minutes or until heated through. Serve with bread or chips.

    We also love a little avacodo bean dip- in a casserole dish, put a layer of refried beans, a layer of avacado dip (not guacamole),a layer of sour cream, a layer of mozerella cheese and top with chopped tmatoes and green chiles or olives. Serve with chips- yummmmmmy!

    We love the cheesy football! Just take a pack of creme cheese, mix it with 8oz sour cream, some green onions, and a cup of shredded cheese. Shape it into a ball then roll the ball in bacon bits. Serve with crackers. Good stuff!

    Pigs in a Blanket
    (for kids during the big game)

    Ingredients

    * 1 (8-ounce) can original crescent dough
    * 1/4 cup Dijon mustard
    * 20 mini hot dogs or cocktail franks
    * 1 egg, lightly beaten

    Directions

    Preheat the oven to 350 degrees F.

    Cut each triangle of crescent roll dough into thirds lengthwise, making 3 small strips from each roll.

    Brush the dough strips lightly with Dijon mustard. Put the mini hot dogs on 1 end of the dough and roll up.

    Arrange them, seam side down, on a greased cookie sheet. Brush with egg. Bake until golden brown, about 12 to 15 minutes. Serve warm with the dipping sauce.

    Tangy Dipping Sauce:

    * 1/2 cup sour cream
    * 1/2 cup mayonnaise
    * 3 tablespoons Dijon mustard
    * 1 tablespoon whole-grain mustard

    Mix all of the ingredients in a bowl. Cover with plastic wrap and refrigerate until serving. Can be made a day ahead.

    Spinach Balls

    Ingredients

    * 1 (10 ounce) package frozen chopped spinach, thawed and drained
    * 2 cups dry bread stuffing mix
    * 3 eggs, beaten
    * 1/4 cup grated Parmesan cheese
    * 1/2 onion, chopped
    * 2 tablespoons melted butter
    * 1/4 cup shredded Cheddar cheese

    Directions

    1. In a large bowl, mix together chopped spinach, dry bread stuffing mix, eggs, Parmesan cheese, onion, butter and Cheddar cheese. Cover and chill in the refrigerator approximately 30 minutes.
    2. Drop the mixture by rounded spoonfuls onto a lightly greased large baking sheet. Place baking sheet in the freezer approximately 1 hour.
    3. When ready to bake, allow the balls to partially thaw, about 30 minutes.
    4. Preheat oven to 350 degrees F (175 degrees C). Lightly grease a large baking sheet.
    5. Bake the balls in the preheated oven 20 to 25 minutes, or until lightly browned.

    Cheesy Artichoke dip recipe
    3/4 cup grated sharp chedder cheese
    3/4 cup grated Parmesan cheese
    1 cup mayonnaise
    1 can artichoke hearts – (8 1/2 oz), drained, chopped
    Mix ingredients together. Bake in pan at 350 degrees for 20-30 minutes
    Serve with crackers or bread

    Simply wrap individual sausages in about 1/3 strip of bacon and secure with a toothpick. Dab with sauce And bake at 400 for about 25 minutes (That’s my oven, adjust timing for yours)

    I love spinach dip! Yum! Just frozen spinach (thawed) mixed with some sour cream, parmesan cheese, and a little garlic. All of it to taste. Super easy and extra delicious served on Triscuits! Yummy!
