Do you like stuffing? Stuffing is one of those foods that lots of people like. The thing is, they all seem to like it made in different ways. Swanson knows that there can be great differences (and some controversy) about stuffing. That’s why they’re asking everyone to choose a side in The Great Stuffing Debate.

I love stuffing. It’s one of my favorite things about Thanksgiving. I cook Thanksgiving dinner every year and have for about twenty years. I make stuffing the same way I make most foods – the way that I like it. I like mine very wet and prepared in the bird. I prefer a simple stuffing – bread, onions, seasonings light celery. Sausage is good if remembered. No fruit. I’m very happy with our stuffing, but my youngest isn’t. Well, it isn’t that he isn’t happy with the stuffing, it’s that he isn’t happy that he can’t eat the stuffing. He can’t eat the stuffing because he has Celiac Disease, an intolerance to all things gluten. Of course being his mother’s child, he loves the foods that he can’t have any more the most. Because of that I decided to try and make him a gluten-free stuffing this year. My goal was to be able to give him stuffing similar to the stuffing we’ve eaten every year.

This was my first attempt at gluten-free stuffing and I’m rather pleased with the results. To make valmg’s Gluten-free Stuffing I started with a loaf of gluten-free bread. I toasted it for about 45 minutes, until slightly crispy and toasted. I combined onions, celery and seasoning, and added that to the toasted bread with Swanson broth. Then I baked. The finished stuffing was heavy and wet, like I like it. We agreed that the flavor of the Swanson Chicken Broth really made the difference, as opposed to water or juice like some people use. We’ll be tweaking the seasonings just a tad, but sticking with the base recipe (which I will post shortly, with pictures).
I’ll likely be making two stuffings this Thanksgiving, one for CJ and one for the rest of us. I pretty much like stuffing, no matter how it’s fixed. Onion & celery are definitely good in there.

It must be cornbread dressing and to be really delicious it needs to be baked to a nice golden brown on top.
I always put sausage and apples in my recipe for cornbread stuffing.
Sausage is a must for stuffing.

In stuffing, there must be bread, celery, onion, sage, poultry seasoning, margarine/butter, and chicken/turkey broth.
In stuffing, there should not be nuts, oysters, mushroom, fruit or giblets.
I love cranberries but I hate celery! Blah!
