Swanson Chicken And valmg's Cheesy Chicken And Stuffing Casserole Recipe
By valmg on Dec 11, 2010 with Comments 20

Recently Swanson offered to let me try some of their chicken. Now I’d seen the Swanson Premium Chicken in the grocery aisle before near the tuna but hadn’t gotten it. I didn’t know anything about it and really couldn’t quite imagine what a person would use it for.
About Swanson Premium Chicken
Swanson Premium Chicken is already cooked and ready to use for quick and easy everyday meals, from sandwiches and salads, to soups and main dishes. And it’s certified by the American Heart Association (AHA)—so you know it’s the right choice for your family. It’s 98% fat free, contains no preservatives and is all white meat.
So I got a couple of cans. I’m not going to lie, the first thing I did was use one can to make chicken salad. Now I love chicken salad. But sometimes I’m not in the mood to cook the chicken and make it. And sometimes I don’t have chicken breast defrosted and ready to use. It made sense to me to try making one of my favorite things, something I’d made previously with fresh chicken, so that I could compare the taste.
The chicken salad that I made with the Swanson Premium Chicken tasted a little bit different than if I cooked the chicken myself but was very tasty. The chicken is super moist! And it’s all white meat, something I appreciate since I don’t like dark meat. Plus, the amount of time it saved me (at least a good 20 minutes) was a nice treat! I was pleased to find that the Swanson Chicken tasted good! I felt ready to see what else I could do with it.
I decided to update my Chicken Stuffing Casserole recipe. Before I share this recipe with you, let me explain how it originated. I’ve always loved stuffing. Many years ago I went to make dinner and there were limited items in the house. I decided to combine a package of frozen chicken nuggets with a box of stuffing and a can of gravy and turned it into a meal. Despite the amount of breading it was a favorite of mine for a while. As years went by I made small changes to the recipe, not only making it better but using it as an idea for other recipes (including my mashed potato and chicken bowl). I decided to update this recipe again and ended up giving it almost a complete overhaul.

valmg’s Cheesy Chicken And Stuffing Casserole recipe
Ingredients
- 1 large can (or 2 small) Swanson Premium Chicken
- 1 box Stove Top Chicken Stuffing – PLUS the ingredients to make the stuffing
- 1 large (15 ounce) can Corn (not creamed)
- 1 can Campbell’s Cream Of Chicken Soup
- 2 cups shredded cheddar cheese
- 1 teaspoon onion powder
- 1 teaspoon garlic powder
- salt and pepper to taste
Instructions
Make the Stove Top Chicken Stuffing according to the directions on the box. I make ours in the microwave.
While the stuffing is finishing open the can(s) of Swanson Premium Chicken and corn and drain both.
In a large bowl combine the completed stuffing and the contents of the can(s) of chicken.
Mix in the contents of the can of corn.
Mix in most of the shredded cheddar cheese, leaving about 1/4 cup aside.
Stir in the onion and garlic powders.
Pour the entire mixture into a greased (I used spray) baking pan.
It should look something like this.

Let the dish bake for 20-25 minutes. The cheese on top should be melty and the casserole underneath should have a sort of crispy golden layer on top. It should look something like this.

Let sit for about 5 minutes and serve.
That’s it!
I promise, it isn’t the prettiest dish to look at but it is very filling and very tasty. Plus it’s simple to make and doesn’t cost much to make either. The dish tastes great using the Swanson Chicken, I think mainly because the chicken is so moist.
Thinking my casserole isn’t up your alley? There’s lots of other dishes you can make with Swanson Premium Chicken.
