  • ISBN-13: 978-1402239243
  • About the book: – Substituting Ingredients includes less expensive ingredient options, nontoxic household cleaner solutions, simple recipes for condiments, sauces, marinades and spice mixtures.

Author and senior editor at Intermezzo magazine, Becky Sue Epstein includes more than 1,000 healthy, A to Z, easy-to-find, and cheap substitutions. Her goal is that no cook will ever abandon an appetizing dish for the lack of a particular ingredient, a time crunch, dietary restrictions, or for the cost to make the dish.

Have you ever been in the middle of cooking up a really great recipe for dinner, but you realize you don’t have all the ingredients on your list? If so, Substituting Ingredients is the essential kitchen reference for you!

Did you ever look at a list of recipe ingredients and not know what something is? Did that deter you from making the dish? What about this. Did you ever want to make a recipe but found that you’re missing key ingredients? I’ve actually gotten as far as mixing everything in a bowl only to discover that I don’t have one thing. What do you do? Cover it for another day? Grab your keys and run to the store? You can, if the store is open. Economically and timewise, finding an alternate ingredient is a great solution. But what if you don’t know which things often substitute well for others? Substituting Ingredients solves that problem.

Substituting Ingredients is not a cookbook, it’s a reference book. The book is broken into sections:

  • Substituting Ingredients A to Z – an alphabetical listing of ingredients and their possible substitutes
  • Herbs and Spices At A Glance
  • Measurement equivalents
  • Too Much, Too Little, Too Late: Remedies For Common Kitchen Disasters
  • Household formulas

Ever wonder what happens to a recipe if certain ingredients are omitted because you don’t have it or don’t like it? Wonder no more. This book contains over 1,000 substitutions, food, measuring and temperature equivalents, simple formulas for household cleaners and easy directions to make dozens of common condiments. I recently had a recipe calling for crème fraîche but didn’t know what that was. The book told me how to make it. Ever follow a recipe and have something go wrong with it? I have. I’ve had white things turn brown. Something taste too salty? Where was this book during the great egg foo young episode of 78? Now I know possible solutions. Ever need a household cleaner but not want the chemicals? You can make some things on your own quite easily, and for a lot less than buying the bottled “green” version. One of my favorite features is the measurement equivalents. There’s more than your standard ounce to cup, the book includes conversions for wet and dry, temperature and even pan sizes. Another favorite is the herbs and spices section. Because who really has all of the spices anyway?

I’ve reduced my sodium two ways: 1. I use fresh ground sea salt in most foods – it’s stronger flavored than regualr salt, so I use much less of it! 2. I also use a salt substitute or fresh herbs to brighten up the flavors

    Norma says:

To reduce salt intake check the labels of products you buy (canned soups, veggies, dinner mixes, frozen dinners, etc) There is a wide range of sodium in them – some have twice the amount for a similar product!
