Zoë François, coauthor of Healthy Bread in Five Minutes a Day: 100New Recipes Featuring Whole Grains, Fruits, Vegetables, and Gluten-Free Ingredients, is passionate about food that is real, healthy, and always delicious. She is a pastry chef trained at the Culinary Institute of America. In addition to teaching baking and pastry courses nationally, she consults to the food industry and is the creator of the recipe blog www.zoebakes.com. She lives in Minneapolis with her husband and two sons.

Like me, my son loves bread. The difference between us is that he has Celiac disease and requires a gluten-free diet. That makes most breads a no-no for him. There are some frozen gluten-free breads but they don’t taste as good as fresh bread. That’s why I accepted the offer to review the book Healthy Bread In Five Minutes A Day.
Healthy Bread In Five Minutes A Day contains 100 recipes for homemade breads. One of the things that impressed me the most about the book is that they spend three chapters explaining ingredients, equipment and tips – what they are and why you might use them. The idea of making fresh bread in five minutes is simple – you make a big batch called the master batch and then you can make bread from that batch for up to a week.
The variety of recipes is great and includes breads and desserts such as loaves and pastries. Recipes are broken down into chapters including Whole Grain Breads, Breads With Hidden Fruits And Vegetables, Flatbreads And Pizza, Gluten-Free Breads And Pastries, and Enriched Breads And Pastries From Healthy Ingredients. Each of the recipes includes a list of ingredients and detailed, easy to understand instructions on how to make the dish. The three recipes in the Gluten-Free chapter that I want to try making first are Gluten-Free Parmesan Bread Sticks, Super Sam Gluten-Free Cinnamon Buns and Gluten-Free Olive Oil Bread. How I wish it had a gluten-free bagel recipe! The book contains a section of terrific color photos. I actually wish there were more of them, and that they accompanied the recipes they correspond to.
This would be a great book for anyone interested in making homemade bread.

I would love to win this cookbook. We live 30 miles from a store..so town trips are infrequent. Truth also, I am a carbohydrate addict..knowing how to make it healty would be a big help.

I want to learn how to make bread for 3 reasons.
1). With the economy as it is, I am trying to be frugal and save money by making things from scratch.
2). I am becoming increasingly concerned with hidden preservatives that are being dumped into our food supply.
3). I want a tradition that I can pass on to my two daughters. Hopefully they will take the knowledge I share with them and teach their children the art of making your own bread.

my grandma and mom always made DELICIOUS homemade bread… and i miss it… we live far away… i guess i’ll have to try to do it myself.
I am a big fan of bread. When I was little we always had bread and butter on the table for every meal. Ah, the good old days.
Now I’d like to be able to add healthy bread to our meals. I miss making bread, I always found it relaxing. With our combined household it would be a big cost saving too. Having Gluten-free recipes would be a big help for when our friends come to dinner. I can actually serve bread to them again!!!

I would love to win this book. I’ve just started making my own bread (have made two loaves so far), but have been just doing the hit/miss searches on the web. With this book, I could develop a better understanding of the different ingredients (and techniques) and how they contribute to flavor/texture.
I’d love to win this book to learn to make good gluten-free bread for my girlfriend, who is gluten intolerant (and so she can learn, too). She hasn’t had much luck finding good recipes so far.
