Betty Crocker Gluten Free Dessert Mixes Review And Giveaway

My 10 year old son has Celiac Disease and giving him desserts that are safe is a challenge. He likes and wants the same kind of tasty, yummy desserts that other kids like including cookies, brownies and cake. Especially cookies. Cookies is one of the first signs he ever learned. He loves cookies and he loves to ask for cookies. To give him cookies I either have to spend an arm and a leg buying pre-made gluten free cookies or I have to make them using special ingredients. When I was invited to review Betty Crocker’s new line of Gluten Free Dessert Mixes I couldn’t have been more thrilled.
There are four products in the line, all made in a gluten-free processing facility.
- Betty Crocker Gluten Free Yellow Cake Mix
- Betty Crocker Gluten Free Devil´s Food Cake Mix
- Betty Crocker Gluten Free Brownie Mix
- Betty Crocker Gluten Free Chocolate Chip Cookie Mix
These desserts are easy to make and don’t require any expensive, specialized ingredients. Take the cookies, for example.

To make the cookies you need to mix a stick of butter, one egg and a teaspoon of vanilla in a bowl. Next you add in the cookie mix and combine. This mix will be very crumbly and on the dry side. Then you put the cookie mix onto an ungreased cookie sheet by the spooonful. Because the mix is on the dry side I had a hard time getting it to stay on the spoon so I ended up doing it by hand. Next you bake at 350 degrees for 8-13 minutes, depending on the size of the cookies you;re making.
My first try I placed the dough too close together and ended up with one giant cookie. The second try I put more space between them and they came out fine. The finished cookies were golden and tasty. They tasted like most other fresh baked chocolate chip cookies except they were a little grainier. CJ loved them.We were equally pleased with the two types of cakes and the brownies.

One box of these dessert mixes costs about $4, depending on where you shop. They’re still less expensive compared to premade gluten-free cookies and I think they taste better. I think it’s worth the $4 a box to give my son a treat that’s safe and tasty.

GLUTEN FREE FUDGE BROWNIES!
2/3 cup gluten-free baking mix (such as Bob’s Red Mill All Purpose GF Baking Flour®)
1/2 cup cornstarch
1 cup white sugar
1 cup packed brown sugar
3/4 cup unsweetened cocoa powder
1 teaspoon baking soda
2 eggs, beaten
3/4 cup margarine, melted
DIRECTIONS
Preheat oven to 350 degrees F (175 degrees C), and grease an 8×8 inch square baking dish.
Stir together the gluten-free baking mix, cornstarch, white sugar, brown sugar, cocoa powder, and baking soda in a bowl, sifting with a fork to remove lumps. Pour in the eggs and melted margarine, and mix with a large spoon or electric mixer on low until the mixture forms a smooth batter, 3 to 5 minutes. Scrape the batter into the prepared baking dish.
Place a sheet of aluminum foil on the oven rack to prevent spills as the brownies rise, then fall during baking. Bake until a toothpick inserted in the center of the brownies comes out clean, 40 to 45 minutes.

Oh, we have one of the yellow cake mixes in our cupboard right now to try! I’m making cupcakes tomorrow!! My husband has Celiac’s and we’re always looking for great foods. I wish that there was a relatively inexpensive cinnamon roll mix and my husband wishes there was an even okay tasting GF croissant!!

A friend of our family needs to eat gluten-free. It would be nice to serve one of these treats when their family visits.

Apple-Pear Multigrain Muffins Recipe
I had a craving for an apple oats muffin- so I used quinoa flakes in this recipe. Quinoa flakes give muffins a bit of oatmeal-like texture and heft (as in my Quinoa Pecan Muffins). I used a combo of several gluten-free flours because I like my flour mix to have a nutty, protein rich blend.
Preheat the oven to 350 degrees F. Line a twelve cup muffin tin.
You’ll need:
1 cup peeled diced apple
1 cup peeled diced pear
In a clean separate bowl, whisk together the dry ingredients:
1/4 cup sorghum flour
1/4 cup millet flour or brown rice flour
1/4 cup buckwheat flour
1/4 cup cornmeal
1/4 cup quinoa flakes
1/2 cup tapioca starch or potato starch
1 tablespoon sweet rice flour or arrowroot starch
1 teaspoon xanthan gum
1 teaspoon sea salt
1 teaspoon baking soda
1 teaspoon baking powder
1 teaspoon cinnamon or gluten-free Apple Pie Spice blend
1/4 teaspoon allspice or cardomom
1/2 cup organic light brown sugar
1/2 cup organic cane sugar
Make a well in the center of the dry ingredients and add in:
2 organic free range eggs or egg replacer for two eggs (I used Ener-G Egg Replacer mixed with warm water)
1/4 cup light olive oil
1 medium banana, mashed well (about 1/2 cup)
1/4 teaspoon light rice vinegar
2 teaspoons bourbon vanilla
1/3 cup warm water
Beat to combine and continue beating for a minute or two until the batter is smooth. Add in the apple and pear pieces and stir by hand to combine.
Use an ice cream scoop or spoon to scoop and plop the batter into the muffin cups. The batter will reach the top of the cups- that’s okay.
Sprinkle with organic cane or turbinado sugar, if desired.
Bake in the center of a preheated oven for about 20 to 25 minutes until the muffins are firm.
Cool on a wire rack for five minutes, then turn out the muffins from the pan to keep them from getting soggy. Continue to cool on a wire rack.
Wrap and bag for freezing- they reheat beautifully in the microwave (zap them only briefly).
Make one dozen muffins.
