December Recipe Contest

Do you have a really good recipe? Want to show it off to the world? Think it could win a contest? Enter it in my December Recipe Contest, sponsored by EmealsForYou.

To enter submit your best original recipe in a comment on this post. Include the category it falls under. To see the available categories, go to http://blog.emealsforyou.com and click on the link for Recipe Categories on emealsforyou.com. Submitted recipes should be able to be made in 30-40 minutes and contain common kitchen ingredients. Only one recipe submission per person please.

The recipes will be judged based on ease of cooking, familiar ingredients, and general taste. Contributions will be judged by myself, EmealsForYou, Elizabeth from MomCooks.net and Lisa from LisaCooking.com. The best three recipes submitted to my contest will each win a 10-year membership to EmealsForYou and have their recipes published on both the EmealsForYou blog and the EmealsForYou site, with your names listed as well.     For the Salad category.

    Ingredients
    * one head cauliflower (cut into pieces)
    * one box frozen peas (must be frozen)
    * one head of romaine or iceberg lettuce (cut into pieces)
    * one small jar of Helman’s Real Mayo
    * one small jar of Kraft Parm. Cheese
    * one package Good Seasons Dressing (envelope powder mix)

    Place all the cauliflower in a bowl (large enough to mix later).
    Mix the mayo, cheese and dressing mix and pour over cauliflower.
    Spread the frozen peas over the mix.
    Place the lettuce over the peas.
    Let stand overnight.
    The water from the peas will add moisture to the salad dressing.
    Just before serving mix all together.

    Appetizer

    Hanky Panky Dip
    This recipe is very quick and easy.

    Ingredients:
    1 roll pork hot sausage (mild or medium would work too)
    2 boxes of Cream Cheese
    1 can of Original Rotel (again you can use the heat level your family is comfortable with)

    Brown sausage, drain and set aside.

    In a microwave safe bowl add Cream Cheese and Rotel. Heat on high for 2 to 2 ½ minutes, stir and then heat another 2 to 2 ½ minutes or until the Cream Cheese is completely melted.

    Add sausage and stir.

    Serve with your favorite torilla chips.

    • For thicker dip, drain some of the liquid out of the Rotel.
    • I have made this recipe with Fat Free Cream Cheese many times and my family was never the wiser.
    • This recipe is very forgiving, I have use left over fajita meat or just hamburger when I didn’t have any sausage.
